Mini cupcakes
This batch makes 48 mini muffins and 12 piggie muffins in our house. Piggie muffins are the same volume as a mini muffin. These freeze well.
My daughter is allergic to milk, eggs, and wheat. I found several recipes from Chocolate Covered Katie that I have used to make things for her. I adapted this recipe that was originally for a yogurt loaf to make mini muffins that I stick in the freezer. I have also put it into donuts pans and turned them into donuts with the addition of some last minute powdered sugar so she can have donuts if we're having donuts. I make sure they're not stuck to the pan then stick the pan in the freezer after they have cooled. Once frozen I take them out of the pan and stick them in freezer bags. If there is a birthday party at school where everyone else is having cupcakes, I just take one out of the freezer in the morning, smear some icing on it (maybe some sprinkles) and send it off with her so she can also join the birthday festivities.
She doesn't like to eat (due to a long history of food making her sick) and I have to work hard to add calories to her diet so I use an 8.45 Fl oz carton of Kate Farms Pediatric Standard Vanilla Sole-Source Nutrition Formula in place of the milk when I make this recipe

Method
Sift together dry ingredients in a large bowl.
Stir in wet ingredients until combined.
Makes 60 mini muffins.
Bake at 350 for approximately 12 minutes.
